So you mention Tales of Symphonia characters, but don't actually make a list of attacks and such? How about I take a crack at it. This is for every character, except Raine (she's mostly a healer, so attacks would be very limited).
General ToS Symbol: That thing above the title I assume represents the two world.
General Victory music: The Tale "won the battle" theme.
Lloyd
A: Simple slash. Press three times for a three hit combo
<>A: Thrust with swords
^A: Upward slash
vA: Downward slahs
Smashes: Pretty much sooped-up versions of each A attack, this goes for every character.
B: Demon Fang- Lloyd shots a blast of energy that travels along the ground. Long range.
>B: Beast-Lloyd charges opponents using much force, knocking them down.
^B: Tempest-He spins in the air and travels upward, a way to save himself.
vB: Sword Rain-Hits opponent multiple times.
Tosses: Grabs opponent, slahses with sword, then throws them.
Taunt: Pulls back swords and says "Come on, bring it!"
Victory sayings: Either "It just wasn't your day", "Just as I expected", "I was just warming up" and "You picked the wrong guy to mess with", with accompanying poses from the game.
Alternate costumes:

Colette
A: Simple swipe with one chakram. Hit twice for two hit combo

^A: Jumps up and swipes.
vA: Kicks
B: Pow Hammer-Colette throws a squeaky hammer. Might stun opponent.
<>B: Dual Ray Thrust-She powerfully throws both her chakrams.
^B: Fly-Wings come out and she flies up. Mostly good for saving her, but can damage if she flies into someone.
vB: Ring Whirlwind-Colette spins around, hitting opponents repeatedly.
Tosses: Grabs opponent and can hit with chakram before throwing. Up-throw has her fly upward with the opponent and throws them.
Taunt: Points with right arms and says "I won't lose to the likes of you!"
Victory sayings: She says "I hope you learned your lesson!", "There! *drops chakram* Whoops! Hehe!", "That was easy!" and "Pretty good, Right?, all with accompanying poses.
Alternate Costumes:

Genis
A: Hits opponent with kendama
<>A: Hits opponent with ball on kendama
^A: Launches kendama ball upward

B: Fire Ball-Launches a ball of fire
<>B: Rock Blast-Rocks rises up from the ground a set distance from Genis.
^B: Cyclone: Can suck in nearby opponent ans cause damage, can also be used to save Genis by blowing him upward.
vB: Icicle: A spear of ice rises up from the ground, hitting specific target.
Tosses: Can wrap kendama string around opponent and reels them in closer. he can kick them and with up-throw, lauches small fireballs at opponent.
Taunt: Holds out left arms and bobs head while saying "So, so sad!"
victory Sayings: "All talk, no action.", "Man, that was pathetic!", "Keep working on it, okay?", and "That's what you get for messing with me!", all with accompanying poses.

vB: Summon: Corrine-The little man-made summon spirit appears out of nowhere and drops on an intended target's head.
Tosses: Grabs nearby opponent and can strike with cards.
Taunt: Waves cards in front of face and says "Whatsa matter? Afraid?"

B: Fierce Demon Fang-A powerful energy blast, has a shorter range than Lloyd's Demon Fang

^B: Hell Pyre-Zelos jumps up high and launches fire ball. Can save character from fall.
VB: Lightening Blade-Zelos thrusts foward and a bolt of lightning hit the opponent
Tosses: Just like Kratos'
Taunt: Swings sword up, saying "Come and get some" then points it forward.
Victory Sayings: "I'm just too pretty! Seriously!", "I bid thee adieu... Just kidding!",
"Man, I rule! I'm sooooo cool!" and "Thanks for making me look so good!".

^B: Rising Dragon-A high-upward jumping kick, can be used to save Regal
vB: Eagle Dive-Regal has to be up in the air to use this, it's a powerful decent.
Tosses: He jumps onto opponent's shoulders, then spins them around before letting go. he can kick them in the head to cause damage before throwing
Taunt: Turns a bit, flexes arms while saying :"Think you can beat me?"
Victory Sayings: "That was pathetic.", "Redemption still eludes me...","I cannot stop until I've atoned...", "It's fate...".
